MEXICAN BEEF WITH LIME AND AVOCADO SALSA
Serves 1
Ingredients
Beef steak
Red pepper
Mexican spice mix
Coconut oil
Soured cream
Lime
Green salad
Salsa
Avocado
Plum tomatoes
Red chilli
Red onion
Coriander
Pin nuts salt and pepper
Method
Make Salsa – cut 1/2 avocado to 1cm cubes, cut 2 ripe plum
tomatoes, 1 chopped chilli, 1/2 red onion diced, juice 1 lime,
handful chopped coriander. Slice 200g minute beef frying
steak and 1 red pepper – place in a bowl and mix with 1-2
tbsp Mexican or Cajun spice mix. Melt 1/2 tsp olive or coconut
oil in pan. Stir fry beef and pepper until cooked. Serve with
salsa, green salad and dollop of greek yogurt.
